This recipe is pretty new to us, it was our second time making it. We got the recipe from somewhere but mixed and changed it around to make it our own. We always seem to have a hard time following a recipe step by step, and always end up changing it around.
Delectable Granola
-2 cups of oats
-3/4 cup cups steel cut oats
-1/4 cup flax seeds
-1/4 cup peanuts
-1/4 cup almonds
-1/4 cup sunflower seeds (unsalted and shell less)
-1/2 cup shredded coconut
-8 oz dried fruit (we used blueberries)
-4 tablespoons butter
-1/2 cup honey
-2 teaspoons vanilla extract
-1/4 teaspoon salt
-1 teaspoon lemon zest (orange zest works well too)
-Preheat the oven to 350 and combine the oats, steel cut oats, flax seed, peanuts, almonds, and sunflower seeds.
-Put the mix onto a baking sheet and let them toast up in the oven (6 minutes). Mix them so they do not burn and then put them in the oven for another 6 minutes.
-In a saucepan combine the butter, honey, vanilla extract and salt. Let the sauce come to a simmer. *Remember to constantly stir the the sauce so it does not burn! Once it has come to a simmer add in the lemon zest.
-In a large bowl mix together the toasted oats and seeds with the coconut and berries.
-Pour in the sauce and mix it all together. Spread the mixture out onto a (greased!) baking pan, make sure the mix is pressed down and flat.
-Put back into the oven for 5 minutes. Let it cool down before cutting it, and ENJOY!!
