BBQ Cupcakes

I had originally frist tried these "cupcakes" with the Pillsbury biscuits and that was delicious, but I decided to try something different this time! This recipe ended up being delicious!!! These BBQ cupcakes are great for an appetizer or for your main meal! 

Ingredients: 

For the Meat:
- 1 pound ground chicken (I have also used the canned chicken and it is just as good!)
- 1/2 cup Jack Daniel's Barbecue Sauce (I used Honey Smokehouse)
- 1 Small Onion 

For the corn bread (Ingredients that are on the Quaker box):
- 1 1/4 cup All Purpose Flour
- 3/4 cup Quaker Corn Meal  
- 1/4 cup Sugar
- 2 teaspoons baking powder 
- 1/2 teaspoon salt
- 1 cup Milk 
- 1/4 cup Vegetable Oil 
- 1 Egg 

*Preheat the oven to 400 degrees*

- In a medium sized pan heat up a drizzle on olive oil and sauté the onions. They will start to look transparent when they are done cooking. 
- Next, add in the ground chicken and cook that all the way through. 
- Drain out all of the liquid from the pan. 


-While the chicken is cooking, mix all of the ingredients for the corn bread in a medium sized bowl, set aside. 
-Add the BBQ sauce to the ground chicken and let that simmer for a couple of minutes. 




-Add the meat to the corn bread mix and stir together (I know this looks gross, but its so good!)


- Pour the mix into greased cupcake pans. I used a cupcake pan that held 12 cupcakes and then used a mini cupcake pan as well. Bake the "cupcakes" for 15-20 minutes.

Mama Michelle's Wedding Soup

This soup is probably one of my favorites to make, so delicious and easy to make! This recipe come from Michael's mom, who was kind enough to give it to me! :) "Wedding Soup" is a mistranslation from an Italian phrase, "Married Soup", meaning the veggies and the meats in this soup go really well together.

Ingredients:

-1/2 bag frozen meatballs (Target or Wal-Mart brand is fine)
-1lb. canned chicken (13oz)
-1 package of spinach
-1 cup Ditalini or Tubetini noodles
-32oz chicken broth or stock
-2 teaspoons minced garlic (2 cloves)
-3 tablespoons chopped parsley
-1 egg, lightly beaten
-2 tablespoons olive oil
-1/2 cup chopped onions
-1/2 cup dry white wine
-1/2 cup water
-Salt & Pepper



Start by heating up the olive oil in a large pot, once heated add the onions and garlic.

                                    

Next, add the water and frozen meatballs until thawed. 


Add the dry white wine, chicken broth, and canned chicken. 



Cover and heat until it comes to a rapid boil. Add the pasta and boil as written on the package. 


Add the beaten egg and reduce heat to a simmer. Be sure to stir up the egg. 



                                     

Simmer for 5 minutes. Add spinach and simmer for 3 minutes, be sure to put a lid on the soup to help the spinach cook down. 


Turn off heat and stir in parsley, salt, and pepper. Take off burner and let sit for 30 minutes, covered. 

ENJOY (Sprinkle with Parmesan cheese, if desired)!!!

Good Guacamole

Ingredients

-2 avocados
-1 Serrano Pepper
- 1 lime
- 1/2 tablespoon minced garlic
- A slice of red onion
- A pinch of salt (for taste, this is up to you)
- A pinch (or 2 or 3) of  ground cumin
- A pinch of garlic powder
-1 tablespoon cilantro


- Put all of the ingredients (except for the salt, garlic powder, and cumin) into a food processor, or blender, whatever you have. Cut the lime in half and squeeze the juice out. Cut the pepper in half and take the seeds out.



-Pour into a serving bowl. Stir in the salt, garlic powder and cumin. You can add as much as you like.

Sweet Potato Lasagna

This is a healthier version of lasagna. I used sweet potatoes instead of pasta, and ground turkey instead of ground beef. You can make this meal as healthy as you want and use whatever veggies you like or have on hand. This was my second time making this and it was great the first time but even better this time!!
This is a more time consuming recipe, a lot of this can be done in advance (chopping veggies, prepping sweet potatoes, or even make the meat mixture in advance)

*Remember, every ingredient can be switched out for what ever you like, this is just what I had on hand*

Ingredients:
*1 pound ground turkey
*1 small green pepper
*1 medium yellow onion
*1 tsp minced garlic
*1/2 cup chopped mushrooms
*A couple handfuls of spinach, about a quarter of a bag
*1 jar red sauce (24oz) *I used Prego Italian sauce flavored with bacon & provolone...absolutely amazing in this lasagna!!!
*2 medium sweet potatoes
*1 (15oz) container ricotta cheese (I ended up using a little less)
*A handful of mozzarella cheese (optional)
-Spices-
salt, pepper, ground cumin, chili powder, paprika (Just a pinch of each)


-Clean and poke fork holes into the sweet potatoes. Put them (separately) in the microwave for 1 minute. Meanwhile, start chopping up your veggies. You want about equal parts of all the veggies, minus the garlic. Next, slice up the sweet potatoes, you want to make really thin slices since this is the "pasta".


-Now you have 2 choices. You can either put the sweet potatoes back in the microwave for another minute, or you can roast them in the oven. It all depends on how much time you have. The first time I made the mistake of doing neither and the sweet potatoes ended up being a little hard. This time I put them in the oven and by the time I was done cooking everything else and was ready to actually use the sweet potatoes, they were already baked and cooled.  
Roasting Option:
preheat oven to 400 degrees. Place sweet potato slices on a baking sheet with foil. Drizzle slices with olive oil, salt, and pepper. Put in oven for 10 min. flip, 8 min.) 


OR you can just put them back in the microwave for a minute or 2 (you want them to be soft, but not falling apart) and season them with salt and pepper! 

-While the sweet potatoes are going, heat up a large skillet with a drizzle of olive oil. Start cooking the onion, green pepper, and garlic until the onion becomes transparent looking. 


Once the onions are cooked add in the ground turkey. Once the turkey is completely cooked drain out the pan. I just crumpled up a paper towel and used my spoon to stir it around the skillet to get rid of all the extra liquid. 


-While that is cooking, start chopping up the mushrooms. I personally don't like mushrooms but Michael does so I chopped mine up into very small pieces. This way it just gives the lasagna flavor without having a mouthful of mushrooms. 


-Stir the mushrooms into the skillet, and add in the spinach. Put a lid on the skillet for a few minutes so the spinach can cook. 


-Next, you want to put a sprinkle of all your spices; salt, pepper, ground cumin, chili powder, and paprika. -Also, you want to add a little bit of your sauce, just enough so that everything is lightly coated with the sauce. 

-Now it is finally time to start making your layers!!! 

**Preheat oven to 350 degrees**
-Spray a baking dish with cooking spray. Lightly coat the bottom of the dish with your sauce. 


-Add on the sweet potatoes. Put them as close together as you can. Its like a puzzle, you can cut some pieces in half if you need to. 


-Add the meat mixture next. Use about half of it. 


-Next, (my fave part) add some of the ricotta cheese. You can add as much or as little as you want, or none at all if you are being good (I figure if Im using sweet potatoes and turkey and can pile on the ricotta!). 


-Then just repeat the steps one more time; sauce, sweet potatoes, meat, ricotta. 
-I top mine off with the rest of the sauce and a light sprinkling of mozzarella cheese. 
-Put it in the oven for 35-40 minutes and you are done!!!

Tasty Green Beans

This is one of my favorite side dishes! It is so yummy and delicious, we recommend you trying this one out!

Ingredients

- one package of frozen or fresh green beans
-3 slices of bacon
-about 1/4 cup of onions (you can be the judge of this one)
-garlic powder
-salt and pepper
- A splash of olive oil

Start off by slicing up the bacon into little bite sized pieces and cook them in a large skillet. Our bacon came peppered!

Drain out the bacon grease from the skillet. Add in the onions, green beans, and a drizzle of the olive oil and let those cook. Once the onions and green beans are soft, add the bacon back in. Sprinkle on some garlic powder, salt, and pepper for taste. Mix it all up and ENJOY!

Spicy Crunchy Chicken

This was the first time we tried this chicken out, we were wanting something different. We were not sure about how it would taste, but it ended up being a keeper! In the past we've tried something similar, instead of smashing up Doritos we smashed up Cap'n Crunch's Crunch Berries and that was delicious (we will have to do a post for that some time!)!! The best thing about this recipe is it is super fast and easy to make, just put it in the oven and walk away!

Ingredients:
- 6 halved chicken breasts
- flour
- salsa (we used a Target brand, Archer Farms; Original thick & chunky salsa)
- Doritos; Spicy Sweet Chili

*Preheat the oven to 350 degress, and spray a pan with cooking spray*

Rise and dry the chicken off. Then flatten the chicken out by pounding it, this will help let all of the flavors get into the chicken and just make the chicken flatter so you are not biting into a big thick piece of chicken.


You want to purée the salsa because the chunks wont stick to the chicken.



Smash up the Doritos


We made a little assembly line for the chicken with the flour, salsa, and chips. Take each piece of chicken and coat both sides of it in the flour, then put it in the salsa, and then the chip crumbs.


Place the chicken on the pan and spray the top of the chicken with cooking spray. Bake the chicken in the oven for one hour.

Pancake Mix Muffins

So what do you do when you wake up in the morning and really want to make some delicious muffins but don't have the time or all of the ingredients?! Use pancake mix! I didn't have any flour, so I decided to make blueberry muffins with pancake mix. Plus it is a lot faster than making muffins without the pancake mix, which was very nice!

Ingredients

2 1/2 cups of pancake mix (Any kind will work, we used wheat)
1 egg
1/3 cup of vegetable oil
1 cup milk
1/3 sugar
1 teaspoon cinnamon
1 teaspoon pumpkin spice
1 cup blueberries (fresh or frozen)

Preheat your oven to 425 degrees. Mix all of the ingredients together in a medium sized bowl, except the blueberries.


Grease muffin cups or use the liners.
Fold in the blueberries to the mix.


Carefully fill the muffin cups about 3/4 full. Bake for 13-15 minutes, until golden brown.
