Mama Michelle's Wedding Soup

This soup is probably one of my favorites to make, so delicious and easy to make! This recipe come from Michael's mom, who was kind enough to give it to me! :) "Wedding Soup" is a mistranslation from an Italian phrase, "Married Soup", meaning the veggies and the meats in this soup go really well together.

Ingredients:

-1/2 bag frozen meatballs (Target or Wal-Mart brand is fine)
-1lb. canned chicken (13oz)
-1 package of spinach
-1 cup Ditalini or Tubetini noodles
-32oz chicken broth or stock
-2 teaspoons minced garlic (2 cloves)
-3 tablespoons chopped parsley
-1 egg, lightly beaten
-2 tablespoons olive oil
-1/2 cup chopped onions
-1/2 cup dry white wine
-1/2 cup water
-Salt & Pepper



Start by heating up the olive oil in a large pot, once heated add the onions and garlic.

                                    

Next, add the water and frozen meatballs until thawed. 


Add the dry white wine, chicken broth, and canned chicken. 



Cover and heat until it comes to a rapid boil. Add the pasta and boil as written on the package. 


Add the beaten egg and reduce heat to a simmer. Be sure to stir up the egg. 



                                     

Simmer for 5 minutes. Add spinach and simmer for 3 minutes, be sure to put a lid on the soup to help the spinach cook down. 


Turn off heat and stir in parsley, salt, and pepper. Take off burner and let sit for 30 minutes, covered. 

ENJOY (Sprinkle with Parmesan cheese, if desired)!!!
