Peanut Butter Sandwich Cookies

This is a recipe that I got from my grandpa, I get my love of cooking and baking from him :) He made these Peanut Butter Sandwich Cookies when we were visiting so I had to steal the recipe from him! So here it is..

Ingredients
1 cup butter-flavored shortening
1 cup creamy peanut butter
1 cup sugar
1 cup packed brown sugar
3 eggs
1 tea spoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
71/4 teaspoon salt

Filling
1/2 cup creamy peanut butter
3 cups confectioners sugar
1 teaspoon vanilla extract
7-8 tablespoons milk

In a large mixing bowl, cream the shortening, peanut butter, and sugars until light and fluffy.


Add eggs, one at a time, beating well after each addition.


Beat in vanilla.



Combine the flour, baking soda and salt; gradually add to the creamed mixture.



Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Flatten to 3/8- in. thickness with a fork Bake at 375 degrees for 7-8 minutes or until golden. Remove to wire racks to cool completely.


In a mixing bowl, combine filling ingredients; beat until smooth. Spread on the bottom of half of the cookies, place the other half of cookies on top of the frosted ones.
