Stuffed Peppers



Amazingly Good Stuffed Peppers



Okay so we have to say that we are NOT big fans of peppers. But we tried this recipe and it was so good! You can't even taste the (nasty) pepper flavor. If you are not a pepper lover you have no excuse not to try this recipe! I promise, you will love it! (If you don't it's not my fault!). We have tried this recipe two different ways, cooking the peppers in the oven and on the grill. If you have a grill, use it! The stuffed peppers are good either way but we have to say the grilled peppers are better! We didn't grill them this time, but if you want to just brush the peppers with some oil and put them on the grill for 4 minutes each side.So technically we were supposed to cut the recipe in half (we made 2 stuffed peppers) but the filling was so good we ended up putting more on our plates. Plus now we have some for tomorrow! So you can either cut it in half (if you are making 2) or use the whole thing!

Ingredients
- 1 pound ground beef
- 1 small yellow onion- a small handful grape tomatoes (cut in half)- 3-4 garlic cloves (chopped)
- about 8(give or take) mushrooms (cut in half or quartered depending on how big)
- 1 can of black beans- 1/4 cup monterey jack cheese
- 2 poblano peppers- salt (for taste)- 1 teaspoon chili powder

Put the peppers in the oven (375 degrees) for 12 minutes.

Meanwhile, in a skillet cook the ground beef. Once that has fully cooked drain the ground beef and set aside.
Using the same skillet as the beef, cook the onion and garlic. You want the onions to be soft and almost translucent looking. Keep stirring so they don't burn!

After the onions and garlic has cooked add in the mushrooms and black beans (drain the liquid from the bean can first!). Once this has cooked for a bit add in the tomatoes.

Add in the ground beef and cheese to the mix.

Once the peppers have cooked carefully cut the tops off and scoop out the seeds (be super careful not to rub your eyes until you have washed your hands!). Take a spoon and pour the meat mixture into the peppers. Put the peppers back in the oven for 10 minutes. ENJOY!!
