Homemade Pudding

Vanilla Pudding

So anyone can go out and buy a box of instant pudding, but how awesome is it to make your own pudding? Honestly this quick and fast recipe takes less time than going out buying the pudding and then making it. It is hard to mess this recipe up. If you are not a fan of (boring) vanilla pudding, try out different things. Add in cocoa powder, add in crushed up cookies (Oreos would be so good in this!), chocolate chips, anything you want. Have fun and be creative with this recipe!

Ingredients
-2 cups of milk
-1/2 cup sugar
-3 tablespoons cornstarch*
-1/4 teaspoon salt
-2 teaspoons of vanilla extract
-1 tablespoon butter


* So if you do not have cornstarch (we didn't) you can substitute it for flour. 1 tablespoon of cornstarch= 2 tablespoons of flour. It is just used to make the pudding thick.

Mix all of the dry ingredients together in a saucepan (cornstarch/flour, sugar, and salt). Next add in the cold milk. Make sure you mix all of the ingredients well before turning on the heat, you want to get rid of all of the lumps. Turn the stove on medium heat, constantly stir the mix to prevent lumps.


The mixture will then start to get thicker right before your eyes (it's kind of neat) but don't let the pudding start to boil. Once the mix is thick turn off the heat and add in the butter.


Once the butter is mixed in and has melted add in one tablespoon of vanilla extract.


For more flavor (and because we love the taste) add in a tablespoon of vanilla butter and nut extract. If you don't have this, or don't want to use it you can either use a different flavor or add in another tablespoon of vanilla.


Transfer the pudding into a dish and refrigerate and cool before eating.


If you put it in a bowl with no lid, cover the pudding with plastic wrap. Remember to push the wrap all the way down so that it is touching the pudding. This will prevent the pudding from getting a hard top.
