Grilled Pizza

Signature Honey Crust Pizza

We have been using this recipe for a while now, and we have changed it around until we were finally satisfied with it. We make our pizza dough using 2 cups of wheat flour and 1/2 a cup of all purpose or bread flour. One thing that we have learned about making a dough with wheat flour (whether you are making pizza or bread) is that is needs wheat gluten. Otherwise the baked dough comes out really dense. It is not light and fluffy like it should be. But if you don't want to use wheat flour, you wont have a problem and wont need the wheat gluten. Or you could just skip the first step and buy the dough at the store (that's what we used to do hehe).
This is our signature honey crust pizza meaning yes, we do put honey on the crust. Trust us, if you have not tried this before you must! It is so good!! Something we learned about using a grill to good pizza is the dough might not cook all the way through if you are using a charcoal grill, like we did. Since we could not control the heat we had to finish the pizza in the oven. It was still good and crispy from the grill and had the grill lines on the bottom.

Pizza dough Ingredients

-2 1/2 cups of flour
-1 packet of yeast
-3/4 teaspoons of salt
-1 cup of very warm water

-2 tablespoons of olive oil or vegetable oil
-3 1/2 teaspoons wheat gluten (this is only if you are using wheat flour)
-1 tablespoon of honey
(plus some extra for the crust)

Combine the water, and yeast. Let it sit for at least 5 minutes.

Next add in the oil and honey.

Add the salt and then the flour (make sure you add the salt in first, it is easier to mix in this way). You might need to use you hand to knead the dough and make sure it is completely mixed.

Transfer the dough into a medium sized greased bowl. Cover the bowl with a damp paper towel. Let the dough sit for at least 2 hours to give the dough time to rise.

Take the dough out of the bowl and roll it out. Make sure the dough is not bigger than the space in the grill! Brush both sides of the dough and (this is optional) sprinkle the bottom side of the dough with cornmeal.

Carefully place the dough on the heated grill and cook the dough for 2 minutes.

Flip the pizza dough over and cook that side for 2 minutes.

Take the pizza crust off the grill and put all of your favorite toppings on (we use cheese, peperoni, onions, and mushrooms). Brush the crust with honey. You can either put the pizza back on the grill for 5 minutes or put it in the oven at 375 degrees for 10 minutes. ENJOY!!
